Flanissimo started as a way to unwind. With four kids and a full house, flan was the one thing in the kitchen that was just mine — I’d make a batch in the mornings, more for the process than anything else.
The chocoflan version came out of pure curiosity — what if the cake and the flan swapped places? — and once I got it right, it stopped being a kitchen experiment and started being the thing people actually asked me to make again.
I still make every one by hand, in my own kitchen, on the weekends. No mixes, no shortcuts — just the same recipe I’ve been perfecting since it was just something I did for fun.

How far in advance do I need to order?
I ask for at least 48 hours' notice on most orders — a bit more around holidays and busy weekends. The earlier you reach out, the more likely I can lock in your exact date.
Where do I pick up my order?
Pickup is here in Elgin, TX. Once your order is confirmed, I'll send you the exact address and we'll settle on a time that works for you.
How long does the flan stay fresh?
Best enjoyed within about 5 days, kept refrigerated. It also freezes well if you want to save a slice for later.
Do you offer different sizes?
Right now I make one size — a 24" × 24" chocoflan — and don't offer smaller or custom sizing. If you need more than one for a bigger event, just let me know how many and I'll get them ready.
Do you take custom flavor requests?
Right now I only make one thing: classic chocoflan. Keeping it to one recipe is what lets me make it really well, rather than a little of everything.
What allergens are in your flan?
Every chocoflan contains eggs and dairy. I don't currently offer a version without them, so please keep that in mind if you're ordering for someone with allergies.
